Make Carrots More Fun with this Carrot Muffin Recipe

Ingredients: 

  • 3 eggs
  • 2 shredded carrots
  • ½ cup greek yogurt
  • ½ cup maple syrup
  • 1 teaspoon vanilla extract
  • 1 ½ cups whole wheat flour 
  • 1 ¾ teaspoons baking powder
  • 1 ½ teaspoons ground cinnamon

Directions: 

  1. Preheat oven to 350ºF
  2. Whisk eggs in a large bowl
  3. Add the greek yogurt and whisk until your mixture is smooth and fluffy
  4. Pour in maple syrup, milk and vanilla extract. Stir until smooth.
  5. Add the shredded carrots, wheat flour, baking powder, and cinnamon. Combine all ingredients in the mixture. 
  6. Pour the batter in your greased muffin tin and bake for 20 minutes.
